Soupe de butternut grillée à l’ail

La butternut, c’est bon pour la santé?

Oui, et en plus c’est bon tout court!  La butternut est une excellente source de fibres, de vitamines A et C, de potassium, et de magnésium.

J’ai appris récemment que la vitamine A est excellente pour les personnes en hypothyroïdie donc j’ai augmenté notre consommation de courge, carottes et épinards cuits.

La butternut est très facile à faire pousser (du soleil + de l’eau) mais il faut de la place parce qu’elle pousse sur une vigne. J’en ai juste planté une cette année et je vais récolter 4 butternuts. La butternut se conserve plusieurs mois dans un endroit sec et sombre. Elle se mange en soupe, en purée ou sautée à la poêle (voir cette recette de quinoa au butternut et à l’origan que j’ai posté l’année dernière.

La butternut est une courge très dense avec un peau très lisse. C’est assez difficile à éplucher. Mais pour cette recette rapide et super facile, pas besoin d’économe!

Les ingrédients

  • Une butternut de taille moyenne
  • De l’huile d’olive
  • 4-5 gousses d’ail
  • Du bouillon de poule (ou végétarien)
  • Sel et poivre

La recette

Couper la courge en deux et retirer les pépins:

 

 

 

 

 

 

 

 

 

Badigeonner d’huile d’olive, ajouter des gousses d’ail:

 

 

 

 

 

 

 

Mettre au four 25-40 minutes, badigeonner  d’huile d’olive 2/3 fois en cours de cuisson pour éviter que la chair ne se dessèche. La courge est cuite quand la chair est molle et se perce facilement à la fourchette.

 

 

 

 

 

 

 

Laisser refroidir 15 minutes puis retirer la chair avec une cuillère. Placer dans un bol, ajouter l’ail, du sel du poivre et une brique (1 litre) de bouillon:

 

 

 

 

 

 

 

 

 

 

 

 

Passer au mixeur et ajouter du bouillon si nécessaire. Les quantités de cette recette sont un peu vagues, mais la butternut varie énormément en taille (entre 500 grammes et deux kilos!) et tout dépend si vous aimez votre soupe épaisse ou pas. Voici la consistence qu’on préfère à la maison:
